Perhaps as a correction, Stephen: *parchment* would be the most appropriate
term. This was already the conclusion of a microbiologist from Reading
University back in the 1960s, and was reaffirmed recently by detailed
biochemical analysis performed by William Ginnell of the Getty Museum, in a
study conducted for the purposes of the Israel Museum.
You're right that the Cross school frequently refer to one text or another
being "on the leather", which is quite inexact. Leather still contains some
organic material that is capable of further degeneration. Parchment
consists, if I remember rightly, simply of islands of protein helixes fixed
in a sandwich of integument. It's irrelevant whether some hair or skin
still attaches.
